Coconut-Apricot-Cake
Ingredients:
250 g unsalted butter,
softened
200 g sugar
4 eggs
1 tbl spoon vanilla
sugar
1 tbl spoon dark rum
250 g plain flour
1 pinch of salt
1 heaped tsp baking
powder
100 g dark chocolate
chips
75 g grated coconut
one handful of dried
apricots, chopped into small cubes
Method:
Preheat oven to 180 °C
and line a cake tin (30 cm) with baking paper.
With an electric mixer
beat butter and sugar until light and fluffy. Add eggs, vanilla sugar and rum
and beat until well combined. Mix together flour, salt and baking powder and
sieve unto egg mix. Add chocolate, coconut and apricots and stir by hand until
just combined.
Pour into the prepared
cake tin and bake on the lowest shelf of the oven for one hour or until a
skewer comes out clean.
