Elderflower
Cordial
(makes
about 1.5 litres)
Ingredients:
20 freshly
picked elderflower heads
1 kg sugar
20 g citric acid (from the chemist or pharmacy)
2 lemons and 2 oranges, cut into slices
1 l water

Method:
Bring the
water to a boil in a large pan, add the sugar and stir until dissolved. Add the
citric acid, the sliced lemons and oranges and leave to cool.
Shake out
the elderflower heads (don’t wash them) and add them to the liquid. Cover and
leave in the fridge for five days, stirring occasionally.
Filter
through a fine sieve, bring the liquid to the boil and pour hot into sterilized
warmed bottles.
