February 2014 - Mushroom-Chestnut-Soup




(serves eight)

Ingredients:

20 g butter
1 tbsp olive oil
one large onion, chopped
3 cloves garlic, finely chopped
750 g chestnut or button mushrooms, cleaned and sliced
200 g chestnuts, cooked and chopped
150 ml Sherry
750 ml chicken stock
150 ml cream
60 g Chorizo, chopped
Flat-leaf parsley or sage, chopped
truffle oil (optional)



Method:

Melt butter and olive oil in a large casserole, add onion and garlic and cook gently for 10 minutes until soft. Add the mushrooms and chestnut pieces and increase the heat. Fry for 10 minutes, until most of the liquid has evaporated. Add Sherry and cook for a further couple of minutes. Pour in stock and cook covered over low heat for 10 minutes more.

Leave to cool for a bit, then add the cream and whizz in a food processor until smooth. This can be prepared in advance.

To serve, gently reheat the soup. In the meantime fry the chorizo bits in a non-stick pan until crispy and drain the fat. Add the herbs and stir together.

Divide between soup bowls, decorate with chorizo and freshly milled pepper and drizzle with a few drops of truffle oil, if using.

Februar 2014 - Champignon-Kastanien-Suppe



Champignon-Kastanien-Suppe

(für acht Personen)

Zutaten :

20 g Butter
1 EL Olivenöl
eine grosse Zwiebel, gehackt
3 Zehen Knoblauch, fein gehackt
750 g Champignons, geputzt und in Scheiben geschnitten
200 g Esskastanien, gekocht und gehackt
150 ml Sherry
750 ml Hühnerbrühe
150 ml Sahne
60 g Chorizo-Wurst, klein gewürfelt
frische Petersilie oder Salbei, gehackt
Trüffel-Öl (optional)



Zubereitung:

Butter und Olivenöl zusammen schmelzen, Zwiebel- und Knoblauchstückchen darin bei kleiner Hitze für 10 Minuten dämpfen. Pilzscheiben  und Kastanien beifügen, Hitze erhöhen und für weitere 10 Minuten braten, bis der grösste Teil der Flüssigkeit verdampft ist. Sherry beifügen und zwei Minuten köcheln lassen. Mit Brühe aufgiessen und 10 Minuten zugedeckt bei niedriger Hitze garen.

Etwas auskühlen lassen, die Sahne beifügen und im Mixer fein pürieren. Bis hierhin kann die Suppe vorbereitet werden.

Zum Servieren die Suppe vorsichtig erwärmen. In dieser Zeit die Chorizo-Würfel in einer beschichteten Bratpfanne ohne Fettzugabe knusperig braten. Ausgetretenes Öl abgiessen und die gehackten Kräuter unterrühren.

Suppe auf Teller oder Suppentassen verteilen, Chorizo darauf anrichten und nach Belieben mit ein paar Tropfen Trüffel-Öl und frisch gemahlenem Pfeffer abschmecken.

Février 2014 - Velouté de champignons et châtaignes



Velouté de champignons et châtaignes

(pour huit personnes)

Ingrédients :

20 g beurre
1 cuillère à soupe d’huile d'olive
un oignon haché
3 gousses d’ail finement hachées
750 g champignons nettoyés et coupés en lamelles
200 g châtaignes cuites et hachées
150 ml Xérès ou Noilly Prat
750 ml bouillon de poulet
150 ml crème liquide
60 g de chorizo, coupé en petits morceaux
persil , ciboulette ou sauge, le tout ciselé
huile de truffe (en option)



Préparation :

Faites fondre le beurre avec l’huile d’olive dans une grande poêle et faites-y revenir l’oignon et l’ail pendant dix minutes à feu doux.

Ajoutez les champignons, augmentez la température et faites-les sauter jusqu’à ce que la plus grande partie du liquide soit évaporée.

Ajoutez le xérès et faites bouillir pendant deux minutes. Ajoutez ensuite le bouillon et les châtaignes puis laissez mijoter à couvert durant dix minutes à feux doux.

Laissez refroidir (complètement ou bien juste 30 minutes), ajoutez la crème et passez au mixeur. Assaisonnez avec sel et poivre selon votre goût.

Pour servir, réchauffez doucement le velouté et pendant ce temps-là sautez les morceaux de chorizo sans matière grasse  jusqu’à ce qu’ils soient croustillants. 

Egouttez et mélangez le chorizo avec les herbes ciselées.

Mettez le velouté dans des bols ou des assiettes creuses, disposez le mélange chorizo et herbes puis versez  un filet d’huile de truffe.

August 2013 - Lemon Crème brulée



Lemon Crème brulée

(serves six)

Ingredients:

300 g raspberries, blueberries or other soft fruit
zest and juice of three organic lemons
150 g sugar
4 eggs
300 ml single cream
six tbsp. brown sugar



Method:

Divide berries (or chopped soft fruit) between six ramequins. Preheat oven to 150°. Boil the kettle.

Put the lemon zest and juice and the sugar into a large bowl and whisk until the sugar has dissolved, then stir in the eggs and cream. Don’t whisk to long, the mixture should not become too frothy.

Divide the lemon cream between the ramequins, put them into a deep roasting tin and fill the dish with hot water from the kettle to about halfway up the ramequins (bain-marie).

Bake for 30 minutes, leave to cool in the hot water for about 10 minutes, then remove and allow to cool before covering the ramequins with cling foil and leaving them to set in the fridge for at least two hours.

Before serving sprinkle the set crème with a tbsp. of brown sugar and caramelise with a blow torch or under a very hot grill.

Serve with a dollop of crème fraîche or yoghurt, some fresh berries and a biscuit.
