February 2013 - Seville Orange Wine



Seville Orange Wine

This tastes great either as an aperitif or as a digestive

Ingredients:

6 Seville (bitter) Oranges
5 l Rosé Wine
1 l neutral tasting Brandy or Vodka (55°)
1 kg sugar
2 vanilla beans
2 cloves
½ tea spoon cinnamon
one pinch powdered ginger
½ Orange



Method:

Chop the whole bitter oranges (including the skin) into small pieces. Mix wine and brandy in a large pan or plastic container, add the sugar and stir until the sugar has dissolved. Add the bitter oranges and the spices and stir again.
Cover and put in a dark, cool place to infuse for three to four weeks, stirring occasionally. After two weeks add the chopped ordinary orange and check the taste. Add more sugar or oranges if you like.
Pour wine through a fine sieve, leave to rest for another two or three days and filter again before filling into sterilized bottles. This fruity bitter wine keeps for several years and gets even better with maturing.
